Each day (apart from the last day) is a hands-on day of easy to make recipes which you can make and enjoy in your everyday life. We have found that you learn by far better doing it yourself under our guidance. This training is also suitable for the kitchen novice
Days 1, 2, 3 and 4 are all about learning the basics and necessary skills, techniques and special ingredients behind how to create any kind of food imaginable the healthiest way possible. So you’ll be able to pick up any raw chef book and be able to re-create and adapt the recipes masterfully.
On days 2, 3 and 4 you will be making and keeping the recipes of 20 different recipes each day, and by the end of day 4 you’ll have a full working knowledge of the raw chef kitchen covering the food processor, dehydrator and high speed blender and all the different ways you can use these tools to create a varied and outstanding cuisine.
On day 5 we go into high gear and go into advanced culinary mastery skills of cheese and chocolate making, culinary theory and how to recreate any kind of recipe from anywhere in the world and make it raw, vegan and outstandingly healthy so that you can pick up any recipe book of any culture and make all of the recipes if you so choose.
All food on all days is vegan, raw, no synthetic ingredients, no grains, no animal products, no cooking and 1000% delicious!
By the end of the training you will have all the skills necessary to work in a professional raw chef kitchen, or even open your own if you so choose. You’ll be able to entertain friends and family with great style and give yourself enough healthy culinary variety to last you a life time.

Day 1 – Knife Skills Workshop
“Become a Master at Using Kitchen Knives
and Essential Food Cutting Techniques”
This workshop is designed to introduce the enthusiastic amateur to knife skills. On this session you will learn all about knife skills and the appropriate techniques.
You will learn:

Day 2 - Food Processor Mastery
Learn how to make simple, quick recipes that you can share
with your friends and keep yourself raw-food motivated!
On Day 2 you will be making approx 20 recipes using and mastering all the different permutations of a food processor, recipes include:
- Sushi Maki (vegan)
- Mango Tart
- Chocolate Mousse
- sunflower cheese

- fresh tomato sauce
- ”tuna” salad
- fruit leather
We shall only use 2 machines in the whole day: food processor and dehydrator so that you can easily do it all over again when you get home!
Day 3 - Dehydrator Mastery
This time we're back to master the "raw oven" the dehydrator - to simulate that cooked, warm and heavy feel in foods. Also you will learn how to make foods that will last in your cupboards for months to snack on

Day 4 - High Speed Blender Master
On Day 4, you will be using a high speed blender to make delightful all raw soups, yoghurts, and mousse. The recipes line up will include:

Day 5 - Advanced Culinary Mastery
This is the jewel in the crown of the chef training, by day 4 you will have a complete working understanding of raw culinary techniques, then on this fifth day of the training you will learn how to make your food taste, look amazing and appeal to all the senses: Culinary Theory – the science behind outstanding cuisine.
- Advanced cheese making techniques
- By now you would have done some simple “cheat” cheeses. On day 5 you will be learning how to emulate and create cheeses of the finest quality using acid and fermentation techniques.
- How to make your food more enjoyable and appealing
- Food Critique, Bring in some samples of the food(s) you have been creating for an assessment of how they can be improved.
- How to turbo charge your culinary creativity and fine tune your taste buds: Raw Chef’s Challenge!
The students challenge Peter Pure to re-create and emulate an ungodly cooked food recipe. His challenge is to make a totally raw and vegan creation taste and look like the original cooked recipe. Your challenge is to tell Peter how you would make it! In this fun game, points will be awarded and deducted for imagination, proposed ingredients, and proposed preparation techniques!
The benefit of this exercise is that I've found it to be the major starting block in getting new chefs to start creatively coming up with ideas and ways to mock cooked food and come up with their own culinary ideas and techniques - something that is essential if you want to be fully proficient in the raw food kitchen. The biggest benefit by far is that by understanding the process Peter goes through you will be able to make any recipe from any type of recipe book raw, cooked, ethnic, but make it totally raw, vegan, healthy, look better and taste better than the original!
